12 eggs (or however many you would like to make)

Pre-heat smoker to 225 degrees F. Prepare perfectly hard-boiled eggs . Cool the eggs under cold running water then peel. Spray the rack you will be using for the eggs with non-stick cooking spray. It’ll make clean up very easy. Put the eggs on the rack and make sure the vent on your smoker is about 3/4 open so the smoke and the air can circulate. Once your smoker has reached 225 degrees put the rack with the eggs in the smoker. A pan with liquid should be added to the smoker as well. You can use water, different types of juices or beer. We’ve started using beer and really like the results. Place wood chips of your choice in the smoker and close the door. Use a little more than a handful of wood chips and smoke the eggs for 60 minutes. For a lighter smoke taste you can use cheery and apple wood chips. For a little more depth you can use pecan or beech wood. After 60 minutes remove the eggs from the smoker and let cool.
