Smoked Turkey
Ingredients
1 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon crushed red pepper flakes
1 turkey – mine was 17 pounds
Directions
Mix all the dry ingredients and season the turkey (inside and out) with the dry rub. Make sure the turkey is covered well. Spray your smoker rack with non- stick cooking spray and put the Turkey on it. Turn your electric smoker to 225 degrees. Once your smoker has reached temperature add the rack with the turkey. Fruit chips go very well with poultry. You can use Apple, Peach, Cherry etc. I have used all of the wood chips I just mentioned as well as Pecan and Beech. We love the smoky but not too strong flavor of both Pecan and Beech. In our Masterbuilt Electric Smoker we have to use a pan with liquid when smoking to prevent the meat from drying out. Depending on your own taste you can use Water, Apple Juice, or any other liquid. We found that a can of Beer does the trick for us. Smoke the turkey to 160 degrees. Remove from the smoker and let the turkey rest for about 20 – 30 minutes. Carve and enjoy.
I cooked the Turkey to 160 degrees and it took a little over 9 hours @ 225 degrees in our smoker on a very very cold day.
